Ingredients:

3 pound of organic yellow onion (Smaller size preferred)
2 cups of water
1 cup of soy sauce
1 cup of vinegar
1/2 cup of sugar or to your taste or no sugar
3 tablespoon of salt Optional: Dried red pepper

Since it’s getting colder, I would even add some thinly sliced ginger and garlic to be extra healthy. You can pickle just about any vegetables that can be pickled with this recipe. After a week or two weeks of fermenting depending on the weather, I would store this in the refrigerator.
