Salsa de Aguacate, or Avocado Salsa

Salsa de Aguacate, or Avocado Salsa – A spicy and creamy salsa that is the perfect topping to any Mexican food. Don’t confuse Salsa de Aguacate with guacamole, though. There’s a big and yummy difference. Enjoy!
Ingredients
  • 4 tomatillos, husks removed
  • 1 onion, quartered
  • 6 garlic cloves
  • 4 jalapeño
  • 2 serranos
  • 4 cups of water
  • Salt to taste
  • Handful of fresh cilantro
  • Juice of 4 small/med limes
  • 2 large avocados, pitted
  • 1 tablespoon olive oil + 2 tablespoons sour cream or Crema
Instructions
  1. Add tomatillos, onion, garlic, and jalapeño in a large stock pot.
  2. Add enough water to cover.
  3. Bring to a boil.
  4. Let boil 6-8 minutes, or until tomatillo is soft.
  5. Turn off stove.
  6. Add cooked tomatillo, onion,garlic, and chiles to a blender along with 1 cup of the water used in boiling.
  7. Discard the rest of the water.
  8. Be very careful. It will be very hot.
  9. With a kitchen towel, blend until smooth.
  10. Add salt, cilantro, lime juice, avocado.
  11. Add olive oil or sour cream (if using)
  12. Blend until smooth.
  13. Taste for good measure.
  14. Serve and enjoy!
