  • 1 cup granulated sugar
  • ½ cup buttermilk
  • ½ cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups plus 2 tbsps all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp lemon zest
  • 2 cups diced strawberries

For Glaze

  • 2 cups powdered sugar
  • 2 tbsp butter, melted
  • ⅓ cup finely diced strawberries
  • ½ tsp lemon juice
  • 2 tbsp milk

How to Make Fresh Strawberry Bread

  1. Preheat your oven to 350ºF then grease a loaf pan and set it aside;
  2. In a medium bowl, mix together sugar, buttermilk, oil, egg, lemon zest, and vanilla until combined;
  3. Combine 2 cups of flour, baking powder, baking soda, and salt in a separate bowl;
  4. Now, combine the wet and dry ingredients together until just combined;
  5. In a small bowl, toss the diced strawberries and 2 tablespoons of flour to coat the strawberries;
  6. Fold the berries into the batter;
    1. Pour the batter into the prepared loaf pan and bake for 50 minutes or until the toothpick inserted int he center comes out clean;
    2. Remove from the oven and cool for 10 minutes before removing from the pan and placing on a cooling rack.

    How to Make a Strawberry Glaze

    1. In a small bowl, combine the powdered sugar, melted butter, strawberries, lemon juice, and milk until no lumps remain;
    2. Pour glaze over the cooled bread then slice and serve.
