Strawberry Bread
For Bread
- 1 cup granulated sugar
- ½ cup buttermilk
- ½ cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 2 cups plus 2 tbsps all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 1 tsp lemon zest
- 2 cups diced strawberries
For Glaze
- 2 cups powdered sugar
- 2 tbsp butter, melted
- ⅓ cup finely diced strawberries
- ½ tsp lemon juice
- 2 tbsp milk

How to Make Fresh Strawberry Bread
- Preheat your oven to 350ºF then grease a loaf pan and set it aside;
- In a medium bowl, mix together sugar, buttermilk, oil, egg, lemon zest, and vanilla until combined;
- Combine 2 cups of flour, baking powder, baking soda, and salt in a separate bowl;
- Now, combine the wet and dry ingredients together until just combined;
- In a small bowl, toss the diced strawberries and 2 tablespoons of flour to coat the strawberries;
- Fold the berries into the batter;

- Pour the batter into the prepared loaf pan and bake for 50 minutes or until the toothpick inserted int he center comes out clean;
- Remove from the oven and cool for 10 minutes before removing from the pan and placing on a cooling rack.
How to Make a Strawberry Glaze
- In a small bowl, combine the powdered sugar, melted butter, strawberries, lemon juice, and milk until no lumps remain;
- Pour glaze over the cooled bread then slice and serve.
